A brand new year is coming ahead with lots of hopes and joys..This year I have witnessed my growth in many ways.I have become a little more stronger to face the ups and downs of my life.I have shaped my character into a person with deep understanding of things.Have learnt to make wise choices within my reach and decided to work harder to acheive the best out of life.I decided to chose to be happy even though I don't get what I desire in life..I have had a lot of improvement in terms of my attitude..Learned to enjoy the simple pleasures of life..I lived each day of this year spending close to Nature witnessing some of the incredible and beautiful things on Earth..Met few wonderful people that i can keep for my life time..Got i nspired got hurt got merrier..what not !!Little did I knew in the start of this year about the joys that were coming on my way..I heartfully thank God for giving me a fantastic year full of joys and opportunities to make my life better.Life is too short to be wasted with silly things.Make the best out of it and create your own opportunities..When I say opportunity I mean it..Take the opportunity to enjoy some beautiful sunrises and come out of the box and enjoy some glorious light.Stop limiting yourself and utilise the world to the fullest to fulfill your dreams.Tear your cacoon and bring in the new soul in you!!

Enjoy the happy moments and be prepared for the challenges!!I would like to end this year and welcome the new year with a sweet recipe- Badhusha. Badusha is a traditional Indian sweet made during Diwali usually but I take the chance to make it often when there are guests around,It is that simple to make .You can finish the entire process on a early morning before that lazy hubby wakes up and bugs you about whats there for breakfast!You just need few ingredients in your pantry to make it.I have made these bite sized badushas for a dear fried of mine while she was pregnant.I usually avoid buying it from shops to gift to our dearest friends.Like you see Home Made is the best!
Takes 60 minutes
Makes 10-12 pieces
- Maida or White flour - 1 1/4 cup
- Butter at room temperature - 1/4 cup
- Baking powder - 1tbsp
- Curd - 2 tbsp
- Oil - For deep frying
- Salt - a pinch
- Sugar - 2 cups
- Water - 2 cups
- Green cardomom- 2
- Melt butter in a micro-wave safe bowl for few seconds.Add in curd and beat well such the curd gets blended with butter well.It should become like a smooth batter shown in the last picture.
- Mix flour and baking powder and sift them fine.Add in to the butter and curd mixture and mix well to form a smooth dough.The dough should be soft enough and not be over kneaded else the badhushas will turn hard.
- Make uniform balls out of dough and shape it like discs.Press it gently in the center with your fore finger.I made another shape by making swirls at the end of the badhushas but couldnt actually record it properly.Please check out the video below on how to shape badhusha.
The texture of fried badhushas should be soft and flaky
- Its time to make the sugar syrup.Take sugar and water into a hard bottomed vessel and boil it for 10 minutes or so until the syrupy textures comes in,Actually you just need a little thick solution to immerse your badhushas.Add in crushed cardamom and place the fried badhushas into the syrup gently.Cover it for 20 mins and take out the juicy badhushas and serve!
Warm soft and flaky Badushas are ready to be melted in mouth!
- Don't use more curd as it can actually harden the badhushas and change the texture of it.
- Don't compromise on the amount of butter for a perfect taste.
- You could use melted ghee or dalda(vanaspathi) in place of butter.
