Have lots of tomatoes in my fridge left over..So I thought to prepare a chutney with it .These freshly prepared chutneys are very famous in Andhra.My mom prepares this with coriander theme.But I dropped that ingredient for now.It goes very well with hot rice,dosa and idly.You can even spread it on bread instead of jam/butter if you want a spicy touch:)
Ingredients:-
- Tomatoes-4 big
- Oil-3tbsp
- Green chilli-2
- Red Chilli Powder 2tbsp
- Jeera-1tsbp
- mustard seeds-1/2tbsp
- Garlic pods-4 crushed
- Kasuri Methi -1tbsp
- Methi seeds(menthulu)-1tbsp
- Tamarind-lemonsized(soaked in hot water for at least 15min)
Method:-
Heat oil in a pan,Add chillies.When they turn soft add the sliced tomatoes.Cook them until they become mashy.It requires a good amount of time to get that required consistency or till the oil separates from the tomatoes.Adjust the salt,add tamarind paste and blend them in a mixer.Then add chilli powder, kasuri methi and mix well.Heat oil in a pan.Tamper with jeera,mustard,uradh,curry leaves and methi seeds:)
Note:-If the tomatoes are ripe and red,there is no need to add tamarind.
