Carrot Egg Stir Fry

Carrots are my favourite ..I love their bright colour and it is very rich in vitamin A which is good for eye sight..I prefer to eat a carrot daily ,it can make your skin glow and radiant..Cooking with carrot is always a painful thing for me as it takes lot of effort to cut the veggies,But I have recently found out an easy way to overcome this problem..


Am boiling the carrots in cooker up to one whistle such that the carrots will be soft to cut and also it takes less oil to cook..This time I have chosen eggs to go with carrots and I should say this curry is reasonably hit ..Crunchy carrots mixed with egg burji is a flavourful combination and a perfect fit to go along with rotis or sandwichMy husband didn’t like it where as my mom liked it much..frankly to say,mixed opinion on this curry so you guys gotta try and let me know your opinion too..

Serves – 3
Prep Time – 30 min


You Need:

Fresh Carrots – 1/2 kg
Eggs -2
Oil – 5 tbsp
Green chilli slit – 3
Salt ,pepper,red chilli powder(for seasoning egg) – 1 tbsp
Coriander powder – 1/2 tbsp
Coriander Leaves
Curry Leaves – 2 springs
Cumin seeds – 1/2 tbsp
Mustard seeds – 1/2 tbsp
Channa dal – 1/4 tbsp
Salt to taste

Method:

Peel the carrots and boil them in pressure cooker until one whistle comes.Allow them to cool and cube them.

Crack open the eggs in a bowl and season with salt pepper and red chilli powder.Keep it aside.

Heat oil in a pan or kadai and splutter cumin,mustard and curry leaves.add in channa dal and fry till nice aroma comes.

Add in green chilli and saute for a minutes.then throw in carrot and fry without a lid for 10 min,

You could add the coriander powder at this stage too.I added it after adding eggs to the carrots.

Add the seasoned egg and stir it well immediately so that the egg will get coated to the carrot pieces.

Keep stirring the veggies n carrot for 2 minutes on high flame.

Add in salt,coriander powder and cook on low flame for 5 minutes

Garnish with coriander leaves and serve hot with chapatis or rotis.

Peel your fresh carrots

And boil them in cooker for one whistle
Boiled…done and allow them to cool

Chop them into pieces..
Crack open the eggs into a bowl

Season with salt pepper and chilli powder

And mix well..


Now lets get started with tampering the curry..


Add in green chillis

And then your beautiful carrots

Sprinkle some salt and coriander powder

Add in your egg mixture

And cook,adjust salt and coriander powder again

And stri fry till done πŸ™‚
This is a quick recipe which can be done very soon,also a great sandwich filling..healthy too..You could just wrap this in a tortialla and carry it to work as a breakfast or lunch..
