Athidi Dhevo Bhava! Today’s Chit Chat with Julie

Today we have our Julie from Erivumpuliyumm as our Athidi..One things which attracts me in her blog is the basics tab..she gives us a easy day to day tips and how to store food ingredients in an easy manner..I like it very much and thats one of my favourite columns in her blog..Come,lets have a chit chat with her while enjoying some tasty melting butter cookies..

Siri: When did you start blogging and what made you to start it?
Me: I started blogging in March 2011..After reaching US ,I had lot of spare time esp in winters and that’s the time I felt the need of spending my time effectively and usefully,also to develop my culinary skills.And blogging appeared to be the best option.
Siri : Tell us about you and how you manage your time to blog?
Me:  A housewife and home maker with two small sons.I usually spend my time to blog either when kids are away to school or when they are busy in their play time.
Siri : Whats your favourite cuisine
Me: I like Indian,Thai and mexican.
Siri : Share some tips to reduce the cooking time
Me: Using the newer gadgets like food processor,micro wave  reduces cooking time considerably.Pressure cooker is another good option.If you are a working lady,you can always peel the skin of onion and other veggies.store them in Ziplocs for easy use which I usually avoid unless there is consicderable amount of work in the kitchen.
Siri : What type of camera you use and share some tips on food photography..Btw your pictures are very nice and I have seen a great transformation in your blog..
Me: Happy to hear that my pics are nice but am  an amateur to this field and don’t feel I can rightly answer the camera questions well.I use CanonSX 130  poin & shoot camera.
Siri : Share some tips on making the blog  more readable..
Me: Avoid overcrowding the page with more gadgets.Be very precise in writing down the measures and include all points when you write a post.Always think the person reading the post is a new born baby to kitchen.(although there may be many who already new the points )
Siri : How is my blog useful and give me one tip on how can I improve it.
Me: Your blog is a wonderful collection of authentic Indian recipes.I don’t think you have left out any scope for me to comment on improvement,Great job dear!!
Siri : Your blog looks amazing and I have seen it growing into a very neatly and well framed space..and the detail steps you mention..Do you mind if I give you a small suggestion?

Over to my post- Piped Butter Cookies
When Siri(Sireesha) asked me to do a guest post for her,I was very happy  to share my recipe.Though we have known each other for just 2 months probably but she is become a very close part of Erivum Puliyumm space and a great friend to me too.Thanks Siri for the lovely opportunity to show case my recipes at your space. I am highly obliged.Today’s recipe is a very easy cookies which is a very friendly one with kids and to adults like me too.:)
Piped butter cookies can be made in different shapes but I tried the rose pattern.The piped butter cookies are also commonly known as Melting moments.As the name implies,these literally melt in your mouth.The recipe is very simple and everyone can give these a try.Do try these out and enjoy!!
Ingredients
  • unsalted butter 175 g/ 1 1/2 sticks (3/4 cup)
  • icing sugar 40-50 g( 1/3-1/2)
  • pure vanilla extract 1/2 tsp
  • plain flour/all purpose flour 175 g
  • corn flour 40 g
  • salt a pinch
  • halved cherries/chocolate chips (few;optional)
  • red food color 2 drops (optional)

  
Method
  • -Cream the butter and icing sugar with the electric mixer until pale and fluffy.Add in the vanilla extract and beat for another 30 seconds.
  • -Sift the flour and corn flour together over the butter mixture and mix until smooth.Add the red food color 2 drops if using.
  • -Pre heat oven to 350 degrees F (180 degrees C) and line a tray with parchment paper.
  • -Spoon the mixture in the pastry bag fitted with a large star shaped nozzle.Pipe into the required shapes on the parchment paper.Space the shapes well apart.Place the halved cherries or chocolate chips  on top if using.
  • -Place  the tray in the refrgerator for 15-20 minutes (so that it is slightly firm and doesn’t spread much on baking).
  • -Place in the oven an bake for 12 minutes or until the sides are slightly browned.
  • -Remove,cool on wire rack and Serve !!

 Servings ~ 30 cookies
NOTES
-Icing sugar has corn starch in it which helps in binding the cookies well.
-You can use a cookie press too to pipe different shapes.
-Adding food color enhances the looks otherwise it has nothing to do with the taste.
