Garlic Potato Roast | Spicy Garlic Potato Fry | Potato Recipes

Garlic is my favourite spice and has it own health benefits.I like to add garlic in most of my dishes.Today’s recipe is Garlic Potato Roast which is very spicy and garlic rich.This hot spicy potato roast is prepared by seasoning with freshly crushed garlic.It gives a totally different taste to regular potato roast..Thanks to my colleague Preethi for this hot idea..Try this next time you buy some potatoes..


My guy totally loved this version of Garlic Potato and finished it in no time..But be careful guys..this is a bit spicy dish which can make your tongue too tired..I must say this is the best taste I ever had with potatoes..Try it out and let me know your valuable feedback..

Cooking time – less than 30 min
Serves -3

Ingredients:

  • Boiled potatoes – 1/2 kg
  • Garlic – 1 
  • Red chilli powder – 2 1/2 tbsp
  • Garam masala – 1/2 tbsp
  • Coriander powder – 2 tbsp
  • Turmeric – 1/2 tbsp
  • Pepper – 1/4 tbsp
  • Salt to taste
  • Water as required
  • Oil – 3-4 tbsp


Step by step Recipe for Garlic Potato roast:

1.Take few pods of garlic and crush them finely.I got this beautiful round stone in Isle of Wight pebble beach..Can you see the imprints of a snail over there??

 2.Take all the spice powders including red chilli powder,turmeric,coriander powder,garam masala and salt.Add a little amount of water and make into a smoth paste.

 3.Boil potatoes in cooker upto 2 whistles and chop them into tiny pieces.Heat oil in a pan and start frying the crushed garlic.

 4.Roast garlic until nice aroma spreads all over your kitchen and also add in curry leaves.Fry for a minute or two.

 5.Now add in the spice paste(should be little bit runny) and cook till oil oozes out.It takes a decent 5-7 minutes for this.

 6.Add in the chopped boiled potatoes nd coat them well with garlic and spice paste.Roast on high flame for 5 minutes.

 7.Reduce the flame and keep roasting the potatoes until golden brown.Adjust some salt if needed and serve hot with sambar rice to have a yummy meal:)

This is my first attempt on garlic potato and it came out super yummy..We enjoyed it with lemon rice,,It tasted heavenly..


NOTES n TIPS:

  1. Adjust the red chilli powder according to your spice levels.Also same applicable to garlic but I love to add more.
  2. I feel we can skip the garam masala as it is already spiced up with red chilli powder and garlic.
  3. Replace potatoes with arbi or raw banana to get a equally tasty roast.
