Egg Fried Rice | Indo Chinese Recipes | Egg Rice

Egg Fried Rice - A true Indo- hinese style
Indo-chinese Egg Fried rice is my guy’s favourite..Being a vegetarian he prefers to eat eggs..It is easy to prepare and tastes great on its own and doesn’t need any side dish..a simple ketchup or a tbsp of oil mixed with red chilli powder would make a perfect combo with egg fried rice..Rice cooked with beautiful separated grains gently tossed with thin sliced veggies and sauted egg makes it all..It is so easy to prepare and tastes great..
Indo Chinese-Egg-Fried-Rice
Ok now with no more fuss I would like to proceed with the recipe:)Cooking time – under 1 hour
Serves 2 to 3

Ingredients:

  1. Cooked basmathi rice – 3 cups(Click HEREto check how to cook rice for biryani/fried rice)
  2. Onion chopped – 1
  3. Green chilli chopped –
  4. Spring onions – 2
  5. Green peas – 2 tbsp
  6. Soy sauce – 3 tbsp
  7. Ginger garlic paste – 1 tbsp
  8. Eggs -5
  9. Pepper and salt to taste
  10. Sugar – 1/4 tbsp(optional)
  11. Oil – 4 tbsp

PREPARATION METHOD:


Wash and dry vegetables.Chop all vegetables finely.Crack eggs into a bowl and season with some salt and pepper.Cook the rice with separated grains and allow it to cool down in a plate.

Heat 2 tbsp of oil and pour in the seasoned eggs.Disturb them and cook till they are done like below.Keep them aside.You can adjust some more salt and pepper while cooking.
 Heat 2 tbsp oil in a butter and sauté onions and green chillies for 5 min. Add in the ginger garlic paste and sauté till the raw smell goes off
Add in the finely chopped vegetables and cook on low flame for exactly 5 to 7 minutes.Remember our veggies should be CRUNCHY..yes crunchy..Add soy sauce and keep the flame high for 3 min.
Adjust salt but please do take care as the soy sauce will contains some salt already.
 Reduce the flame and add in rice,cooked eggs and give it a good mix.Take care not to mash the rice.Handle gently and fold it such that it get mixed well.Sprinkle some spring onions and serve hot!
Enjoy the hot flavoured egg fried rice with some vegetable manchurian..We had it with baby corn manchurian and I would say it is the perfect combo for a good lunch!

NOTES

  • Mix little sugar and a half spoon of oil in soy sauce before adding.It would give nice flavour to the rice.
  • The rice should be completely cooled down before using in the dish else it will get stick together when mixed with soy sauce and vegetables.
  • Chop the vegetables as fine as possible,you will love your egg fried rice:)
  • You can also use left over rice to prepare this.

    Hi minu,try not to use bot more than 3 tbso of soy sauce..i realy dont rem the brand i ised but wil let u knw soon..but it doesnt matter i believe..excess use of soy sauce migjt have made ur rice look more brownish
