Sesame Okra Masala| Nuvvula Bendakaya Fry | Lady’s Finger Fry

Hope you all had a fantastic start to this new year 2013..Well me too..I wish you all a very happy and healthy new year..Okra aka Lady’s finger is my favourite vegetable after potato..The tender vegetable is believed to increase your analytical capability and that’s how my mom made me to develop special liking for this super vegetable..Forget about the super mathematical skills that we may get eating this lady’s finger,it tastes super good either you make a fresh chutney or an aromatic fry..

This lady’s finger fry is specially made with aromatic and freshly ground sesame powder which gives the fry a very different taste..This is a simple yet very tasty recipe which goes well with some rasam rice or sambar rice..But I even fill my bread slices with this spicy fry to finish a simple dinner..

Cooking time – 25 min
Serves -3

Ingredients:
  1. Fresh Lady’s Finger chopped – 250 gms
  2. Sesame powder – 3 tbsp(see recipe below)
  3. Red chilli powder – 1 tbsp
  4. Amchur powder/Dried mango powder – 1 /2 tbsp
  5. Curry Leaves
  6. Mustard seeds – 1/2 tbsp
  7. Cumin seeds – 1/2 tbsp
  8. Bengal gram/channa dal – 1tbsp
  9. Oil – 4 tbsp
  10. Salt to taste
For Sesame powder
  1. Sesame seeds – 4 tbsp
  2. Roasted Bengal Gram – 1 tbsp
  3. Cumin seeds – 1/2 tbsp
  4. Dried Red Chilli -2
Dry roast all the ingredients for 5 min and grind into fine powder.Store it in a air tight container and you can use for 1 month.


Method:
Heat oil in a non stick pan.Start crackling cumin seeds,mustard seeds and channa dal.Add in curry leaves and saute for a minute till nice aroma comes.Add in the chopped lady’s finger pieces and saute for 10 min,

 When the okra turns soft,add in salt,amchur powder,chilli powder and sesame powder.Mix well and roast for another 10 minutes.Serve hot with rice

I totally loved this simple okra fry with the sesame flavour..love to have it any time with some rice and hot rasam..

NOTES:
  1. Don’t add salt in the beginning itself as that may turn okra mashy.
  2. Adding a tbsp of curd can also avoid sticking the okra pieces and avoid mashy nature.
  3. Don’t cook it with a lid covered.Stirring without a lid make the okra crispy
