French Macrons…A failure Story..Baking Partners Challenge 7

Hello guys..am going to blabber about my failure story of making French Macrons today..I was super excited to try these sweet cute devils as soon as I read the challenge..I started making my preparations 2 weeks before the day I tried..and one fine day all set to bake..without a baking paper..I decided not to take any chance and postponed it..Finally got the baking paper and started making them,,,Unfortunately my macrons miserably failed to form their feet yet they tasted heavenly..I could say this is my first preparation ever without missing the actual measurements..I thought I followed the recipe to the dot..but only until I realized that my macrons failed to form their feet..Okay..read on to learn from my mistakes..!
OK..this is the recipe given in the baking partner’s challenge.. Baking Partners is a cheerful group of home makers trying to learn and attain perfection in baking..You can find more details from HERE..I have followed the same recipe without any change in the measurements.I was pretty tensed to see the outcome of my careful preparation so I really could not concentrate on capturing the detailed step by step pictures..Will do next time and wish me best of luck to get some perfect macrons..



INGREDIENTS

  1. Almond Flour 1 cup
  2. Powdered sugar – 3/4 cup
  3. Granulated sugar – 2 tbsp
  4. Aged egg whites – 2
  5. Pink food color – 1 tbsp
METHOD:
  • Crack the eggs little but and slowly roll the shell such that only white falls into the bowl.Now cover the egg whites with a clean plate or plastic cover and refrigerate them for atleast a day and up to five days.Aging egg whites really helps a lot in your macron making.
  • Pulse the almond flour and powdered sugar to a fine powder.Sift the flour to make sure not to form any lumps while piping the macrons.
  • Start beating the egg whites in a medium speed until fluffy and peaks form.Reduce the speed and add in the fine granulated sugar and beat it again with high speed for up to 8 minutes.When you reverse the bowl the foamy eggs whites should not fall down.You can see good peaks forming on your electric beater blades.
  • Mix the food color according to your choice and throw in the almond/sugar flour and fold it with spatula..Ok now comes the problem ..I remember that I have hardly given 15 fold to the mixture thinking that I should handle it with extra care..and this is my major fault!!!! You should fold the batter atleast by giving 50 strokes such that it becomes silky and polished.Remember…50 strokes!!
  • Arrange a baking tray and line up with parchment paper.Now fill your icing bag with this mixture and pipe small circles with some gaps in between each other.Tap the tray evenly on your kitchen counter to remove any air bubbles(which I assume I haven’t tapped properly).Rest the piped macrons for at least 1 hour or until the top layer becomes dry.I have rested them for 1 hour but I found them wet even then..So I have decided not to waste any time(another mistake I guess) and popped in to the oven..
  • Preheat the oven and bake the macrons at 150 degrees and mine took solid 30 minutes of time only to see them baked without any feet.They resembled normal cookies and I was deeply disappointed
  •  at the end..
  • When I discussed with my baking partners..I found that I did not give good strokes while mixing the almond flour to the beaten egg whites…So thats it gals..this is my macron failure story and I am okay now as I felt that I have realised my mistakes and not going to repeat them next time!!
My mistakes are
  1. On a lighter note add more food colour such they get priper colored when bakes
  2. On a heavier note..missed to fold the batter properly without sufficient number of strokes.
  3. Piped the macrons with my hand as piping bag got leaked in between with increased pressure from my hands.
  4. Did not tap the piped macrons and hence the air bubbles would have remained inside.
  5. Did not rest the macrons until the top layer becomes dry.
  6. Never bothered about the baking temperature and always maintained 150 degrees.
Now I have a happy news to share with you all..My tow friends Roha and Love to Experiment have passed on this lovely award to me..So delighted to see this and it keeps me motivated and move further..Thanks gals for all your love and support..
