Cappuccino Coffee Cupcakes| Butter-less Coffee Cupcakes | Cake Recipes

Coffee…The most favorite English word for more than half of the world’s population. Can there be any one who doesn’t like the distinct and nice aroma of freshly brewed coffee. I don’t take coffee but I really can’t resist to the nice smell of it..It is the most consumed drink in the world. There are so many flavors for coffee and each one has its unique taste of it..I personally don’t like to drink coffee but would rather like to try them in cakes. This time I tried my hand on cupcakes and believe me it was a true success. And my most favorite flavor is cappuccino. The creamy texture of cappuccino was the one I fancied upon while I was in college.. I can really die for the smell of it(but don’t like to taste it though)So today we are going to learn about making fluffy airy and soft cappuccino cupcakes. These are very light in texture and also a less sweet version. I have also used eggs in it but you can try your hands on egg less version and let me know the results..
Also this is a butter less version so you can have an extra cake without any guilt or without breaking your diet plan..I have not even used baking powder as I don’t want my cupcakes to be puffed up and all I need a tasty and aromatic coffee flavor:)

Takes 30 min; Makes -8
INGREDIENTS:
  1. Cappuccino coffee powder – 75gms
  2. White Flour – 3-4 tbsp
  3. Eggs -2
  4. Sugar – 1 tbsp
  5. Chocolate chips – 2 tbsp
METHOD:
Pre-heat the oven to its max temperature for 20 min
Take sugar and eggs into a bowl and beat them till the eggs are fluffy for almost 5 min.
Add in the coffee powder and mix well with a spatula. The mixture will be very fluffy and airy at this point and make sure you are not using beater. Just fold gently with spatula.
 Add in the flour and repeat folding and mixing the batter until it is mixed thoroughly. Make sure not to over fold the batter.Dust your chocolate chips with some flour.
Pour batter into your desired shaped cupcakes liners such that only half of the cupcake liner is filled.Bake them for approx. 20 min by checking in between. Prick the middle of the cake with a tooth pick to test if it comes out clean indicating the cake is cooked properly.
Warm and fluffy muffins are ready to dig in!!

Can’t thank enough to my sweet friend of mine who bought me these beautiful silicon cupcake moulds! The happiest moment in life is when your people realise how important certain things are to you!!True isn’t it??
TIP 1: Don’t forget to dust the chocolate chips else they will sink and settle down at bottom
TIP 2: You can use baking powder if you would like your cupcakes to be puffed up.
TIP 3: Use your favorite flavor of coffee powder in place of cappuccino.

    this looks so good siri… just one question – cappucino coffee powder, is it the readymade powder that you get? i too have these heart shaped silicon moulds, which i sneaked and bought when my hubby was looking the other way – pst pst!!! hehe… rn’t they lovely??? 🙂

      I did not use here, ideally i wud put 1/4 tsp if at all i like to use it
