I happened to meet this beautiful lady Reshmi Mahesh over a late evening chat in Facebook..By then I was already in love with her food pictures which actually tempt you to the core..I started discussion about camera,setting etc and then it went on.. She writes at FUNWIDFUD ..her words will be crisp and pictures are just killers..Each and every food picture of hers speak a lot about food and will inspire you to make it at the moment..That’s a great art and I appreciate you Reshmi for the hard work you are putting in..I will get inspired a lot looking at your mind blowing food pictures!!
I could almost smell the aroma of your Chutney Podi from those stunning pictures and your Kappa Masala almost dragged me to that corner in the Vegetable Store ..And those little tortoises you made were so cute and artistic..How can I stop myself from talking about this beautiful and stunning..Strawberry Cake!!

Siri: When did you start blogging and what made you to start it?
Reshmi On one of those boring afternoons after marriage while surfing on internet I found blogger and then created an account with them. Everyday I would open the page write something and then save it..never showed it to my hubby too..Then one day while speaking to mom about a recipe I jolted it down and realized that I can save it here and will be there unlike the things written on the back of receipts. Thus started writing “Easy Cook”. Then one day published the recipe of carrot halwa and felt happy. Same day night published Gulab Jamun too…You know curiosity to know what will happen. When I did all this I was so unaware of blogging and this wide area..I was just getting into it, that life changed its plans and kept me busy and yes I forgot about it in no time. Then after having a baby I got some time in hand when he was sleeping and hubby is away. That reminded me of this space and I started to write here again. Slowly viewers started visiting and then it started to become a part of me.. A part which never complains and is content the way it is…:)
Siri : Tell us about you and how you manage your time to blog?
Reshmi :There is no good stuffs that I can brag about and all the bad stuffs about me is usually bragged by people around..So nothing much to say about me..:) Hmmm..There are two precious assets I posses my husband and my kiddo..I seriously don’t blog on a planned format. Whenever I cook, click and taste a food and it comes out good I post it. Some times I just feel to sit in front of the laptop and scribble something then I blog. Managing time for blog is something I never do currently. Its always the last person on busy days. But if I am writing a post I usually sit for 2 to 3 hours with a post. That’s the maximum time I spend there.
Siri : Whats your favourite cuisine
Reshmi : Enjoy eating Indian, Italian, Thai and Chinese.
Siri : Share some tips to reduce the cooking time
Reshmi :I would ask your help with this question..:) I personally cook three meals a day separately and it does consume a lot of my time..:). Some stuffs that I do are
1. Using Pressure Cooker to cook lentils. 2. Soaking the lentils previous night or 2 to 3 hours before. Reduces cooking time. 3. Washing/cleaning the vegetables when keeping in the refrigerator. I personally don’t like cutting veggies before hand. But you can do it if you are fine with that.
Siri : I can see lot of baking recipes in your blog ..Could you please share some do and don’ts in baking
: There are few baking recipes there that I baked as we enjoy eating them. Seriously I am a wrong person to ask about baking. Though I follow some rules like following the recipe, Proper replacement of ingredients if needed. Correct measurement and time is crucial.
Siri : What type of camera you use and share some tips on food photography..Btw most of your pictures I found were with painted board back ground..anything special in it J
Reshmi :Siri, I am a novice in this area. Don’t go by the gadgets..they are my husband’s..:) I was using a Nikon D3100 for sometime and now upgraded to Nikon D7000. I mostly use 35mm or 18-55mm lens.
Tips:
- know your camera and make it happy by working with it everyday.
- Learn about light.Natural works perfect here and that is the one I use.
- I follow the color wheel most of the times.
- Use props that are apt for the food like fork,plate,glass,bowls,spices,garnish
- Click in all angles before you eat the food.
- Regarding the background, I use everything board,paper,towels, charts,foam boards,wood, tables etc.
No Siri,there is nothing with the painted board background. I kind of like the texture and feel it gives to the photos and its easy to clean up compared to chart paper and foam boards which gets dirty sooner.
Siri : Did you design your own boards for food photography?
Ya I painted and repainted all the boards at home as and when needed…:)
Siri : Share some tips on making the blog more readable..
Everyone has their own likes and dislikes. I prefer to write stuffs that has a flow when someone reads it. As far as I think writing is a gift and if you are aware that you are not good at it then just write to the point (that’s what i do mostly :)). I personally like to keep the space clean instead of 1000 pop-ups coming all over.
Siri : How is my blog useful and give me one tip on how can I improve it.
Siri you have got a lovely space with a variety of recipes. Most of your recipes are very new to me and I am totally in love with them. Have planned to try few of them, will definitely let you know how it turns out..:). I think that you already do it all perfectly..May be you can straighten the pics a bit when needed (saying this just because you wanted me to point out something..:))
Sireesha Puppala from Siris Food is a person most of you are familiar with. For me she is a cute bubbly girl with full of energy…We got to meet virtually through Facebook and then I have always enjoyed her clicks and drooled seeing the delicious food prepared by her. You will find a wide variety of recipes in her space and I say once you are there, you will be lost in that wonderful world of treats. She had approached me long time back for the guest post and I accepted it. As many things came to front in my life, I almost lost track of the date that I had committed. Then I suddenly remembered it and send her an email saying that it will be done soon but that soon took a little long..Anyways she never bothered me with any questions and gal thanks a lot for that.. 🙂
Coming to the recipe, if you are a coconut lover and enjoy its chewiness with a hint of chocolate then this is it…It’s from the book “Desserts 4 Today”. I have given it a little twist by adding cardamom powder. If you don’t want you can just leave it. If you are someone who doesn’t like chocolate, I never thought there will be someone like that until I met my husband..;) You can skip it and enjoy..
INGREDIENTS:
1. White from large Egg-1
2. Sweetened coconut flakes-1 1/2 cups(toasted)
3. Granulated sugar-1/4 cup
4. Cardamom powder-1/2 tsp
5. Chocolate- 2 ounce (melted)
Method of Preparation:
1. Preheat the oven to 275 F. Line a cookie sheet with parchment paper.
2. Mix sugar and egg white in a clean bowl and whisk them till it foamy.
3. Add coconut, cardamom powder to it and mix well till blended.
4. Using a tbsp put 1 to 2 tbsp batter on the paper about 11/2 inches apart, shape it to pyramid using wet hands and bake till its golden brown for 20 to 25 minutes.
5. Remove from pan and cool on rack completely.
6. Melt chocolate and dip the cooled macaroons into it and place them dipped side up.
7. Let chocolate set and then enjoy these crispy and chewy macaroons or store them in cool place for up to 2 days.
Notes:
1. To toast coconut, heat coconut in a pan till it is lightly golden. Cool completely before using.
