Chocolate Kalakand | How to make Kalakand at Home

Imagine, by the end of this post you will decide not to avoid sweets anymore in your short life!Who all want to become fat here? No one isn’t it? I know you are busy and I will make my point!   If taking a glass of milk daily can increase your calcium levels and consuming dark chocolate can make your heart to beat good and longer, then why don’t we try this Chocolate kalakand with NO FATS added and with the whole goodness of unsalted raw nuts and dry fruits? Of course we add sugar too in our milk or at least brown sugar? We can use the same in this recipe. What say? So have milk and chocolate at home? Then let’s do this today…Ok no worries if you don’t have cooking chocolate or dark chocolate. Any milk chocolate will work perfectly. Do you know that Kalakand is one famous Indian sweet that can be prepared with just two ingredients – milk and sugar? I always try to make some interesting fusion in preparing my food. I have recently tried Palak Broccoli dal too which was a bit ok side but not too badJand will be available soon for you Let’s dig into the Chocolate Kalakand recipe

Takes 1 hour; Makes 6 pieces
 
INGREDIENTS :
  1. Whole Milk – ½ litre+ ¼ litre
  2. Sugar(of your choice) – ½ cup
  3. Lemon juice – 3 tbsp
  4. Cooking Chocolate – ½ (of your regular 100 gms bar)
  5. Dry fruits and nuts of your choice – 2 per piece

METHOD:

First step is to prepare paneer or Indian Cottage cheese which is the basic building block for Kalakand. I have already made a post for making Home made paneer. You might need to visit it once.

  • Milk and lemon juice in the first picture is for making paneer.And the milk in second picture is to make kalakand finally. 
  • Take 1/2 lire of milk and proceed for the paneer recipe.You don’t need hard blocks of paneer and just need it in loose form as anyhow we are going to mash it and cook(you can see in the below picture)
  • Start my scrambling the paneer with your hands. 
  •  Then roll into a smooth ball and keep it aside.I just love the aroma and texture of freshly prepared paneer.Do you love too? Take a heavy bottomed vessel and start boiling the ¼ litre milk just for 5 minutes on high flame. Reduce the flame and add chocolate.
  •  Stir with a spoon such that the chocolate starts melting into the milk.Boil it for 5 more minutes and add the paneer ball.
  • Start mashing the paneer ball with the spoon and cook by stirring occasionally for 10 min.It will start sticking to the pan and become thicker,then add sugar and mix well.Cook for another 10 min until the mixture becomes more thicker and there you are!! You will discover the texture very easily and decide that your kalakand is almost readyJ
  • As the mixture becomes more thicker,scrap the sides and gather the mixture to one end of the vessel and switch off the flame.Take a baking paper or grease your plate with some ghee or butter. I said my Kalakand is fat free so I used baking paper.Set the mixture onto the baking paper and garnish with nuts.
  •  Gently trim the edges with your fingers to form a nice block. Allow it to set properly for 15-20 minutes and then you will be able to cut into pieces.

  • Use a non-stick pan not to waste a single gram of your kalakandJ
  • I used raw nuts but if you wish you could fry them in ghee and add.
  • You can adjust the amount of chocolate any time if you feel it is less.
