Vegetable French Toast | French Toast Recipe

May 16, 2013 by Siri

Who wouldn’t like simple toasts and sandwiches that are easy to make and great in taste? Sandwiches are a great option for breakfast and healthy way of kick starting your day. Though this is not prevalent in India, people in cities have adapted the habit of having these for they are simple to make and saves lot of time. Especially for working women this is a simple option to serve their family which can save lots of time and also provide a healthier treat if they are able to make the filling with different kinds of fresh vegetables or eggs or meat according to their preference. Traditional sandwiches are made with white bread where as the world is turning towards healthy and we are seeing different kinds of bread like oat meal bread, brown bread, seed bread etc.You have loads of options to choose from these days. Also the fillings can range from fresh vegetables to eggs, meat, cheese and believe me I have tasted fruit sandwich also in one of my friend’s house.

Of all the varieties French toast is a very famous one which needs few ingredients and less time to prepare. It is also called eggy bread which is prepared by soaking the bread slices in egg coating and pan fried with little butter. The aroma of French toast cannot be explainable for it needs to be felt only for sure. The light sugary texture with crisp eggy layer outside gives it a unique taste and makes it drool-worthy  this time I have tried making my French toast more healthier by mixing some of my favorite vegetables so is the name. This way you can make your meal more nutritious without losing the taste of your choice. Try ti out and let me know what you think!
Takes 15 min; Serves 2
INGREDIENTS:
  1. Bread Slices -3(any kind of bread)
  2. Eggs -3
  3. Sugar – 1 tbsp
  4. Curd – 2 tbsp
  5. Vegetables chopped (of your choice) –As required
  6. Salt – a pinch
  7. Butter- as required
 METHOD:
  • Cut the bread slices into triangle shape and keep them aside.
  • Beat eggs into a bowl and season with some salt.
  •   Add sugar and curd; Beat it well such that no lumps of curd are present.
  • Mix the vegetables and mix the batter well.
  • Dip each slice in to the egg mixture and soak for 30 seconds. Repeat the same on both sides.
  • If you feel the veggies are not sticking to the bread you can place them once you put on pan to toast.
  • While the bread slice is soaking heat butter on a pan.

  • Toast the bread on both sides until golden brown crust is formed.
  • Healthy vegetable French toast is ready to serve.

Hot and crispy Vegetable French toast is ready to serve!!

TIP 1: Usage of curd is optional but it makes the toast very tasty and soft inside.
TIP 2: Vegetarians can skip the egg and use more curd instead. Also if using only curd makes sure you use a tbsp of gram flour in it to get the egg effect.
TIP 3: Include as many varieties of vegetables you like and if you don’t like serve it plain.
TIP 4 : Add a pinch of cinnamon powder in the beaten eggs for extra flavor

Enjoy the simple toast !!
