Cauliflower Lentil Curry Recipe | Cauliflower Pappu Kura

Life is breezy for me these days, I have been working from home from past ten days due to severe flood warnings for the Thames river around my office campus.My sincere prayers are in place for those who got affected by this natural calamity ,Sitting at home and working means loads of bandwidth to play with my passions.Also I have been crazily playing with my new lens that I got recently.Am almost a couch potato now only movement being rolling on to the bed when the light gets dimmer outside.Cooking became so complex for me and also I don’t see any of the thoughts progressing and always feel like cuddling up in my duck feather cozy duvet;I am a awesome wife and didn’t really bother to cook for H on account of my informal break but at least I have to manage myself !I was madly  looking for some one pot meals and simple curries that can be paired with some ready made rotis. I remembered this Cauliflower Lentil curry that I had in my office cafe few days ago.I like the way Britishers(as far as I noticed) consume rice here,only a fist full of grains with loads of curry;They just love Indian curries to an extent they make sure to have a curry night every week:)


I always knew lentils that are cooked only in the form of Dal or Pappu(in telugu) and never tried incorporating into curries,for me dal is like a complete side dish,This idea sounds cool to add little amount in the curries that are loaded with fresh vegetables.I absolute loved this lentil curry and going to try the same with different vegetables soon.It is a good pair for Indian flat breads like roti/chapathi or as a great filling for sandwich
 as well.

Cauliflower Lentil Curry(an Indian curry made with boiled cauliflower florets and lentils along with Indian spices) 
Prep Time: 15 mins
CookingTime: 30 mins
Recipe Level: Beginner

Serving Suggestion: Side dish for India flat breads like roti,chapathi and rice ,sandwich filling

INGREDIENTS:
  1. Cauliflower -1
  2. Yellow Lentils/Kandi pappu – 1/2 cup
  3. Green chillies – 2
  4. Coriander powder – 1 tbsp
  5. Cumin powder – 1 tbsp
  6. Turmeric – 1/2 tbsp
  7. Oil – 3 tbsp
  8. Salt to taste

For tempering:
  1. Mustard seeds – 1 tbsp
  2. Cumin seeds – 1 tbsp
  3. Curry Leaves – 1 spring
  4. Hinge – a pinch(optional)
  5. Dried red chillies – 1

METHOD:

Cut the cauliflower into florets and wash well in hot water.Take water into a heavy bottomed vessel and boil it for 10 min. Add a pinch of salt and turmeric to it. Immerse the florets and boil them for  10 min. Remember not to boil them until they turn mushy. They should be soft and crunchy enough. Allow to cool down and drain the water.Alternatively you can microwave for 15 min.

Soak lentils of your choice in plenty of water for 30 min.Add a 1 cup of water and pressure cook it until soft.

Heat  a wide non-stick pan and add oil.When it is heated add mustard,cumin and red chilies.When they splutter add curry leaves and hinge and slit green chillies . Fry for a minute and add the cauliflower florets . Cook for 10 min in medium flame and add coriander powder,cumin powder and salt. Simmer it and cook for another 5 min.

Add the cooked lentils and mix well. Cook for 10 more min in simmer and sprinkle lots of corainder! Serve hot with rotis or rice!


 SIRI’S NOTES :

  • Make sure you retain the florets in shape and little crunchy while boiling.
  • Use a wide pan for cooking as it will allow retain the shape of florets.
  • Any kind of lentils can be used along with this.
