Spinach Pilaf | Palak Pulav Recipe | Who else want to be Healthy?

Like I said in my previous post am on a constant search for one pot meals these days as am working from home due to severe flood warnings around my office here in London.I love pilafs to the core and keep browsing the web for such varieties all the time.I have had tried all kinds of pilafs so far.Then there is this idea in my mind for a long time to make pilaf out of green leafy vegetables.My eyes lit up when I found a whole bunch of goodness in the form of spinach that day.I soon made up my mind to do spinach pilaf!Believe me it is nowhere  less than normal pulav in taste and am going to make this often from now.I cannot recollect what all types of nutrients and proteins or such xyz exist in Spinach but all i know is green leafy vegatbles are good for your body and can make you look better and radiant! Here you go try this tasty and healthy pulav next time you plan any potlucks or get-together and am sure this will stand as unique dish!

Palak Pulav/Spinach Pilaf(aromatic rice pilaf made with Indian spices and whole goodness of spinach) 
Prep Time: 10 mins
CookingTime: 30 mins
Shelf Life – Best served fresh
Recipe Level: Easy/Beginner

Serving Suggestion: With raitha or any kind of curry.

INGREDIENTS:
  1. Spinach leaves/Palak – 1/2 bunch
  2. Basmathi Rice – 1 cup
  3. Tomato – 2
  4. Green Chilies -2
  5. Ginger Garlic Paste – 1 tbsp
  6. Cumin powder – 1 tbsp
  7. Coriander powder – 1 tbsp
  8. Garam Masala – 1/2 tbsp
  9. Chilli powder –  tbsp
  10. Biryani Masala – 2 tbsp
  11. Bay Leaf – 1
  12. Black Cumin – 1 tbsp
  13. Cinnamon – 1 inch piece
  14. Green cardamom – 1 
  15. Star anise – 1
  16. Oil – 3 tbsp
  17. Salt to taste 
  18. Water – 1.5 cup

METHOD :

Wash and soak rice in plenty of water for at least 30 minutes and keep it ready.
Heat oil in a pressure cooker.Add the whole spices like cumin,star anise,bay leaf,cinnamon and green cardamom and green chillies. Fry for a minute without burning the spices.

Add ginger garlic paste and fry till the raw smell goes off.

Add chopped tomatoes and cook on low flame for 10 min until they turn mushy
Add chopped spinach and salt,let them cook for 7 minutes or so until the leaves turn mushy and get blended well with the cooked tomatoes.Add in briyani masala,corainder powder,cumin powder and garam masala powder and mix well.Allow to cook for 5 minutes,

Add red chilli powder and yogurt and mix well till creamy.After 5 minutes add the soaked basmathi rice and stir well such the grains are coated well with the mixture.

Fry the rice mixture for 5 min without getting it burnt.Add 1.5 to less than 2 cups of water and switch the flame to high.After 5 minutes reduce the flame to low and cook it for 15 min with a closed lid.Check the grains with a fork and then switch off the flame. Serve hot with raitha or eat as such!


SIRI’S NOTES:

  • Soak the rice for at least an hour to reduce the cooking time.When soaked, make sure to use less water while cooking.This ensures that the  grains remain intact and not mashed.
  • If you prefer,you can use spinach puree instead of leaves but I prefer to leave the chopped leaves as such.
  • Replace spinach with mint leaves to prepare Mint pilaf
