Andhra Nuvvula Podi Recipe | Spiced Sesame Powder for Curries I Dancing inside!

Few things in life are so special.Am writing this post while thousands of emotions are dancing in my heart merrily.However much you love your spouse and how much ever you enjoy in your home after marriage, nothing can beat the happiness that you get when you are at your HOME that you grew up in..You get what I mean by HOME yaa??While am glad that am on short trip to India, there is one other thing am feeling special about..Am writing my fist post from my home for sirisfood.I have always been in London home since I started this blog and this feeling of working for my website from home munching something that mom made for me is unique.Life seems so thrilling when mom sits behind me and asks curiously on how and what work needs to be done to make a website like this! I know you would not have found anything worth reading so far or I might not even made a point at all till, now..but this is what my heart sings right now! Happy dancing! Oh yeah,also am making my first post from my own laptop!
 
Today’s post is about a aromatic and home made spice powder made with sesame seeds.Am bored of telling about how much we Andhraites are obsessed to these home made spice powders and can finish a meal with just one of these and hot steaming rice.and forgot to tell, this is the base powder for making pulihora,stuffed brinjal in Andhra and also the very famous vaangi Bath..Right, am going into the post now..

Andhra Nuvvula Podi ( Andhra style spice powder made with roasted sesame seeds as main ingredient) 
Cuisine : Andhra,India
Prep Time: 10 mins
Cooking/Grinding Time: 20 mins
Recipe Level: Beginner

Spice Level: Medium
Makes: About 150-200 gms  
Shelf Life: Up to 3 months fresh when stored in air tight container
Serving Suggestion: With hot rice,ghee and Indian Breakfast Dosa, Idli,also can used in curries for thick consistency and preparation of vegetable fries

INGREDIENTS:

  • White sesame seeds – 150 gms
  • Bengal gram – 75gms
  • Split black gram – 75gms;
  • Dried red chillies – 7-8
  • Garlic cloves crushed – 5
  • Cumin seeds – 2 tbsp
  • Coriander seeds – 1tbsp
  • Grated dried coconut or pieces- 2 tbsp(very optional)
  • Salt as required
  • Oil – 1 tbsp

 


METHOD:

  • Dry roast red chillies in a kadai until nice aroma comes and keep them aside.
  • Lightly roast cumin,coriander seeds and garlic as well
  • Add a tbsp of oil in a kadai and fry the lentils one by one(bengal gram,black gram)
  • In the same pan roast sesame seeds, make sue not to burn them.Keep tossing them while roasting.
  • Allow the roasted stuff to cool down for 5 min or so.
  • First start grinding the lentils coarsely followed by cumin,coriander seeds and red chillies.Remove them and keep aside.
  • Add sesame seeds, garlic pods and grind quickly for few seconds.The consistency should be dry and not become more wet.
  • Add this mixture to the grounded lentils,mix salt and roasted coconut powder.Store in air tight container.

 

 SIRI’S NOTES:

  • Adjust the spiciness by varying the count of red chillies and garlic.
  • Serve it with hot sesame oil and  piping hot rice to enjoy to the fullest.
  • Store in air tight container and take care not to get in contact with water.
  • This is completely a dry process and don’t need to add any water for grinding.
