Agar Agar Strawberry Pudding | China grass Pudding

April 29, 2014 by Siri

I used to sell my books, Yes books.I did fancy those colourful and round ice pops  and popsicles whatever you call  them, the yellows, oranges, pinks, reds and pretty whites too.I almost loved that young chap who sells these colourful ice pops.He would give us our favourite coloured ice pops in exchange of used note books.I would then wait for my home work books to be filled in soon so that I could sell them to get my favourite red ice pops. And then there were days where I used to leave infinite spaces in between words such that I could mark the book as used as soon as possible and so could sell it.All this without getting noticed by amma and on the way back home from school! Sometimes he used to bring some soft pudding in small paper cups for which we need to give 2 books and if you were able to give a long notebook you had hit a jackpot, he would give you cone ice-cream topped with those red and green tutti fruttis. Those memories are still lingering fresh in my mind.Never in my dreams I had imagined that I would prepare such fancy desserts on my own.Life is really a joy ..small small things make our world!
This pale pink soft dessert is called agar agar/china grass pudding made with a dash of strawberry flavour and fresh creamy milk  layered with fresh fruits. It is quiet simple and anyone can make it in just few minutes without much fuss. Also you can use any of the flavours and fruits of your choice. Also this is simple to assemble so you an chose it as a party dessert to save time when you are really busy while making those main courses.

Ingredients:

  1. China Grass/Agar Agar – 10 strips
  2. Full fat Milk – 1 cup
  3. Strawberry essence – 1 tbsp
  4. Sugar – 4 tbsp
  5. Pink food color – few drops
  6. Fresh strawberries slices

Method:

Wash the agar agar in cold water.Cut into small strips.Take water(just to dissolve the agar agar) in a vessel such that the agar agar gets covered. Boil it on low flame until the china grass melts. It takes a good amount of 10 minutes but you can actually make it out by checking.

Once melted it will form a syrup kind of consistency. While this is in progress, take boiled milk into a bowl and stir in sugar well.Add the essence and food colour and keep it ready.

Once the milk is moderately cool stir in the agar agar and mix really well and quickly.Pour the mixture into your desired moulds immediately as it will start setting soon.I have lined my serving pots with some fresh strawberries before pouring the milk. You could add any kind of fruits or skip it if you do not wish.

Chill it for at-least an hour in fridge and serve !Fresh and simple dessert is ready to dig in!

SIRI’S NOTES:

  1. Make sure you pour the mixture quickly into moulds as the agar agar mixture sets in very quickly.
  2. Don’t add too much water while dissolving agar agar as the pudding wil become watery.
  3. You could use any kind of berries for this recipe.
  4. This is not suitable for storing and is best consumed fresh.
