Blueberry muffins that are rich in vanilla flavour and fruity in texture-a perfect go for breakfast!
  • 250 gms/1 Cup All Purpose Flour
  • 100 gms butter
  • 100 gms sugar
  • 2 medium size eggs
  • ½ tsp Baking powder
  • ½ tsp Baking soda
  • 1 tbsp vanilla essence
  • 1.5 cup frozen or fresh blueberries
  1. Sift flours and baking powders.Keep them aside.
  2. Using an electric beater or food processor ,cream the butter with sugar until it turns fluffy and light.
  3. Add the eggs one by one by beating until pale and fluffy.
  4. Stir in vanilla essence. Add in the dry ingredients all at once to the creamed butter.Mix with a spatula and run the electric beater just for few seconds slowly until combined.
  5. Dust the blueberries with some flour** and fold into the batter with a spatula.
  6. Line the muffins trays with cupcake liners.Scoop in the batter until ¾th of the liner.
  7. According to your convenience, pre-heat the oven (I will pre-heat it once I finish all the above steps.
  8. Bake them for 25-30 min at 375 degrees F by checking in between.
  9. Allow them to cool down and enjoy with a hot cup of tea!
Dusting the berries in flour allows them to stay on the top in the batter and won't sink into the bottom.
Oven temperatures may vary so please adjust according to your settings.
This is a basic muffin recipe so you could substitute with any toppings instead of blueberries.
I used fresh berries, if you want to use frozen ones thaw them before using.
